Christmas Creamy Egg Nog



Ingredients

  • 4 egg yolks
  • 1 (5 ounce) can sweetened condensed milk
  • 1 tablespoon white sugar
  • 1 teaspoon vanilla extract
  • 4 1/2 cups milk
  • 4 egg whites
  • 1 fluid ounce rum
  • 1/4 teaspoon ground nutmeg

Directions

  1. In a large mixing bowl, beat egg yolks until they are thickened and light. Gradually stir in condensed milk, sugar, vanilla and milk. Beat the egg whites until stiff, then add them to the milk mixture. Stir rum into the mixture (to taste). Garnish with nutmeg.

Perfect Turkey









prep time 30 min / cooking time 4 Hrs / ready in 17 Hrs

Ingredients

  • 1 (18 pound) whole turkey, neck and giblets removed
  • 2 cups kosher salt
  • 1/2 cup butter, melted
  • 2 large onions, peeled and chopped
  • 4 carrots, peeled and chopped
  • 4 stalks celery, chopped
  • 2 sprigs fresh thyme
  • 1 bay leaf
  • 1 cup dry white wine

Directions

  1. Rub the turkey inside and out with the kosher salt. Place the bird in a large stock pot, and cover with cold water. Place in the refrigerator, and allow the turkey to soak in the salt and water mixture 12 hours, or overnight.
  2. Preheat oven to 350 degrees F (175 degrees C). Thoroughly rinse the turkey, and discard the brine mixture.
  3. Brush the turkey with 1/2 the melted butter. Place breast side down on a roasting rack in a shallow roasting pan. Stuff the turkey cavity with 1 onion, 1/2 the carrots, 1/2 the celery, 1 sprig of thyme, and the bay leaf. Scatter the remaining vegetables and thyme around the bottom of the roasting pan, and cover with the white wine.   
  4. Roast uncovered 3 1/2 to 4 hours in the preheated oven, until the internal temperature of the thigh reaches 180 degrees F (85 degrees C). Carefully turn the turkey breast side up about 2/3 through the roasting time, and brush with the remaining butter. Allow the bird to stand about 30 minutes before carving.
 Enjoy it with a glass of Chardonnay!

The Thanksgiving Story

Thanksgiving Day is a harvest festival celebrated primarily in the United States and Canada. Thanksgiving is a holiday to express thankfulness, gratitude, and appreciation to God, family and friends for which all have been blessed of material possessions and relationships. Traditionally, it has been a time to give thanks for a bountiful harvest. This holiday has since moved away from its religious roots.
In the United States, Thanksgiving Day falls on the fourth Thursday of November. In Canada it is celebrated on the second Monday in October.
The precise historical origin of the holiday is disputed. Although Americans commonly believe that the first Thanksgiving happened in 1621, at Plymouth Plantation, in Massachusetts, there is strong evidence for earlier celebrations in Canada (1578) and by Spanish explorers in Florida (1565).
Thanksgiving Day is also celebrated in the Netherlands. A different holiday which uses the same name is celebrated at a similar time of year in the island of Grenada.

9 Spices for Health, Energy and Longevity

1. Garlic wards off heart disease
In addition to warding off Count Dracula, garlic, the spicy favorite in Italian fare, has been shown to improve cholesterol and lower blood pressure. According to the National Health and Medical Research Council, consuming half to one clove of garlic daily may reduce cholesterol by nearly ten percent. Your breath might suffer, but your heart will thank you. As an antibacterial, garlic is often used to treat minor infections.

2. Spotlight on cinnamon
Another ancient spice to recently come under scientific investigation is cinnamon. 3. Curry for joint health
Are your aching joints not jumping for joy in these autumn days? Try sprinkling some curry on your veggie omelet. Curry, a staple spice combo in Southeast Asian cuisine, contains turmeric, the yellow spice that gives curry its distinctive color. The active component in turmeric is called curcumin. If you are a fan of curry, you will be happy to know that this substance is associated with anti-inflammatory, antioxidant, anti-tumor, and anti-amyloid properties; amyloids are plaque-like proteins that build up in brain tissue, and are responsible for diseases like Alzheimer's and rheumatoid arthritis. In one randomized control study 107 patients with knee osteoarthritis received either 800 mg per day ibuprofen or 2 grams per day Curcuma domestica extract. Both groups showed improvement in pain on level walking and climbing stairs.


4. Star Anise aids digestion
As the name suggests, star anise is indeed star-shaped. Though it is not actually related to anise, star anise shares a similar licorice flavor, due to its content of anethole. Used to bring out flavor in slow-cooked meat dishes and long-simmered soups, this spice frequently makes an appearance in Indian cuisine and is an ingredient of the traditional five-spice powder of Chinese cooking. Star anise has been used in a tea to remedy rheumatism, and the seeds are sometimes chewed after meals to aid digestion.

Norway best for the good life: UN report

UNITED NATIONS (AFP) – The going only seems to get better in Norway which on Thursday was named by the United Nations as the country with the best quality of life for a record-matching eighth time.

Oil-rich Norway -- with its 81.0 years of life expectancy, average annual income of 58,810 dollars and 12.6 years of schooling -- has now topped the Human Development Index (HDI) for all but two years since 2001.



Norway enjoys the world's highest quality of life, while Niger suffers the lowest, a U.N. agency said Monday, as it released a ranking that highlights the wide disparities in well-being between rich and poor countries.

The annual Human Development Index, unveiled in Bangkok by the United Nations Development Program, takes into account life expectancy, literacy, school enrollment and per capita gross domestic product in 182 countries.

"A child born in Niger can expect to live to just over 50 years, which is 30 years less than a child born in Norway. Furthermore, the differences in per capita income are huge for every dollar earned per person in Niger, US$85 are earned in Norway," UNDP said.

Norway was followed by Australia and Iceland on the list, which drew on statistics dating from 2007, before Iceland was hit hard in global economic crisis. Afghanistan and Sierra Leone rounded out the bottom of the ranking.
The United States was listed 13th.



Life getting better in China, Iran and Nepal Trends in the index since 1980 showed an average improvement of 15 percent in countries' scores. The greatest long-term improvements have been shown by China, Iran and Nepal, but progress has been concentrated in education and health rather than income, said the U.N agency.
Afghanistan is new to the list this year — reliable statistics were not previously available — but otherwise leaders and laggards are largely the same.

However, five countries rose three or more places — China, Colombia, France, Peru and Venezuela — while seven countries dropped more than two places — Belize, Ecuador, Jamaica, Lebanon, Luxembourg, Malta, and Tonga.
The index was released as part of the UNDP's annual Human Development Report, which this year highlighted migration.

"Most migrants, internal and international, reap gains in the form of higher incomes, better access to education and health and improved prospects for their children," said the report. "These gains often directly benefit family members who stay behind as well as countries of origin indirectly."
It also suggested that as the populations age in developed countries, they could benefit from increased migration to boost their work forces.
But it cautioned that encouraging migration should not substitute for "efforts by developing countries to achieve growth and improve human well-being."
